PrEtTy iN PiNk CoUsCoUs
I always thought this dish would be perfect for anyone throwing a baby shower for a girl! I saw it on Giada At Home and made a few modifications to make it fit my family better. We probably eat this 1-2 times a month. It's super healthy and so delicious! Every last little couscous crumb is devoured. Serves our large family of 8! *2 c. Couscous any variety, *2 c. Chicken Broth, *1 lbs.Turkey from deli cut THICK so you can chop into bite-sized chunks, *1 T. Rosemary, *2 Apples - diced, *1 Cucumber - chopped, *1 c. Craisins, *1 c. Slivered Almonds, *1/2 Bottle of Light Pomegranate/Raspberry Vinaigrette (Optional) Cook the couscous as directed on the container except add the rosemary and use chicken broth instead of water. It's cooks quickly. While that's cooking, dice the apples and cucumber. Then chop the turkey into bite-sized pieces. Combine everything in a large bowl. Mix well. OPTIONAL: Add the vinaigrette to make everything stick together better and give more flavor. TIP #1: If I want left-overs or are expecting a few more mouths, I add another apple, cucumber and cook 1 more cup of couscous with the other 2 cups. TIP #2: For less pink, add the turkey AFTER the vinaigrette has been mixed in well. *I'm getting hungry just typing this recipe! UPDATE: This dish doesn't photograph well but I promise you it's one of our favorites!
