Jerk Chicken Salad
I have VERY fond memories of
at Mission Beach with good friends and family.
TN gave it to me a few years ago
and anything that comes from her kitchen is delicious
and a step above the normal.
I predict that this will be one of your favorite salads too.2 TBSP olive oil, 2 TBSP Jamaican Jerk Rub, 3 LB Chicken Tenders, 1 Medium pineapple, 2 red bell pepper, 6 green onions, 2 heads romaine lettuce, 2 can black beans, rinsed, 12 slices bacon, cooked and crumbled, 1 lb Bow Tie Pasta cooked and cooled,
Cook chicken and pineapple on grill, let cool. Mix everything else in with lettuce.
Dressing: 4-6 limes- juiced , 1 1/3 c. mayonnaise , 1/2 c. pineapple or apricot jam. Put dressing on when you are ready to serve. Eat immediately (Like you'll be able to stop yourself!). Serves 12-ish with leftovers.
