ChiNeSe ChiCkEn SaLaD

*2 lbs. chicken cooked and roughly chopped (sometimes I cheat with a rotisserie chicken),
*2 ozs. Mai fun rice stick - deep fried (cook according to directions on package),*1 head of lettuce,




*3 stems of celery with leaves,


*4 green onions chopped,


*2 T. chopped toasted almonds,


*2 T. sesame seeds (optional - toasted),


* Add your favorite veggies too.


Combine all salad ingredients.



SALAD DRESSING:


*2T. sugar,


*1/4 c. canola oil,


*2 T. sesame oil,


*3 T. vinegar,


*1 tsp. salt,


*1/2 tsp. pepper.



Combine all salad dressing ingredients in jar and shake well. Mix into the salad mixture just before serving.


I got this savory recipe from BN about 15 (ish) years ago. I make it at least every 3 weeks.


Here is a video I took when I made the Maifun Rice Sticks. It's similar to when Michael Keaton made them in the movie, "Mr. Mom". Remember that one?


I probably had my heat too high but it sure came up fast and smoked more than normal. Also, the flashing lights are my daughter helping me take pictures.
