AsiAn ShRiMp & VeGgiEs
This is one of my ultimate favorites! It's FULL of veggies and other goodies that make this dish FABULOUS! VM brought it to an Elders Quorum party about 3 years ago and it would be impossible to count how many times I've made it since then. The funny thing is, it's more creamy than "Asiany" but delicious none the less.
SAUTEE *3c. celery, *1 c. onion, *8 oz. sliced mushrooms, *1/4 c. margarine/butter,
ADD *1 lg. green bell pepper, *2 cans sliced water chestnuts, *1 c. cashews, *1 pound cooked shrimp,
WHITE SAUCE *1/4 c. melted margarine/butter, *1/4 c. flour, *1/2 tsp. salt & pepper, *2 c. milk, Mix until blended, then pour into pan.
Cook until slightly bubbly and thick.
Serve over white/brown rice or pasta. Tonight it was brown rice for us. Sprinkle chow mien noodles on top.
Take a bite and enjoy all the wonderful flavors. Man! I wish we had leftovers! Another thing I really love about this recipe is that you don't have to be perfect on the measurements. As long as you include all the ingredients, it doesn't matter if you have more or less of one ingredient or another. It still tastes great!
